Throat improved a lot after Lachesis.
Appetite not very good today, some heartburn and the sensation that I cant get a deep enough breath - I can breathe deeply by it feels like Im not getting enough oxygen or air - I guess these will pass.

Correct, these symptoms are from Lachesis, should resolve on their own.

Stomach issues returned. Feels as if someone punched me in the center of my stomach - belching gas, flatulence and nauseated. Also feeling frustrated and anxious about so many issues that are not resolved.

Im uncomfortable with Silica, my dental filling came off the last time I took it, not sure if it can be repaired again, I may lose the canine tooth if this happened.
I have extreme estuation tube tightness with sticky wax in ears, ears are itchy and feel clogged (Right more than left) - theres low pressure from a storm.
Eye is still bothersome.

Throat feels as if something is stuck at base of tongue right side, feels dry but also like a rubbery sticky feeling. Causing anxiety and stress again.

Phytolacca seemed to help for a few hours then throat was the same again. Started getting an itchy rash under left armpit again after taking it - not sure if its related or not.

Im wondering if I should try Natrum Mur 30 for my throat. Most of the symptoms seem fitting with the watery eye and rhinitis too. Nothing seems to be working. Glands are swollen on the right side as well.

If you have the usual sensation of something stuck on the R-side of your throat, better by eating, then Nat-m can cover that. Nat-m wont work for the swollen R-sided gland, but for the rest of the symptoms it can, try it.

Throat improved after taking Nat-M but not completely. I think I can now see the problem that I have a few very small ulcers in the back of my throat.
3 days ago I tried a tiny bite of cooked organic potato (1 small bite) and 2 days ago I tried adding a small amount of garlic (1/8 of a clove) to my soup and now my stomach is squeaking and bubbling sounds again in the lower left side with some uncomfortable pain and flatulence also lowered appetite. It appears I may be intolerant to sulfur the things I cant eat at all are: eggs, garlic, broccoli, cauliflower, but the odd thing is - is that I can eat chicken and beef but I cant eat potato.

Try Lyc 30c and see if that helps. Although some of your symptoms look like sulphur, it may come later.

Just got back some blood results and I have very low Iron and perhaps B12 again because I also have high MCH. Perhaps thats why I get bouts where I feel like I cant get enough air. Im eating plenty of meat, red meat & liver as well as berries for vitamin C, aside from food & supplements is there any homeopathic that can help?

You can try Ferrum Metallicum 30c (Ferr.), single dose for anaemic conditions, it also covers the chest palpitations that you get, also shortness of breath or inability to take deep breaths due to feeling of weight on the chest. Ferr should also cover the underlying cause leading to this anaemic condition meaning if there is any deficiency of essential nutrients or any assimilation problems leading to this condition.
For your other problem have you taken Lyc? Has there been any improvement?

I havent tried the Lyc yet, stomach is improving but not better. I dont have Ferrum met, I have ferrum phos in cell salt, 30 & 6c and I have Oligophytum Iron (H5 FE). Should I order the Ferrum Met 30?

Better take Ferrum Phos and Calc-Phos Cell Salts (2 tabs * 2 times a day for a week) first to see how you respond. Get Ferrum met 30c as well.
