Severe stomatitis/ intermittent sores in mouth

I am a 21 yo female. About a year and a half ago I was on a road trip and suddenly had a sore throat. The next day the throat was worse- swollen, bright red, ect. The following day my gums started to swell up. Soon after my mouth was so swollen that I couldn't close it because my teeth would touch my gums. Chunks of my gums were literally falling off, and my tongue was thrush-like and cracked down the middle. Ever since I have gotten intermittent outbreaks of sore gums. The outbreaks aren't as severe as the first incident, and there is almost no visible lesion but the gums become EXTREMELY tender and slightly swollen. I am wondering if this is perhaps a food allergy or caused by something external? There is no pattern to the outbreaks.

what possibilities you found of this ailness?
